When you’re camping, you should aim to prepare meals and snacks that won’t take too much time and effort. Apart from your main meals, snacks are also important for in between and especially around the campfire. But being at camp doesn’t mean that all you have to eat is trail mix – here are some quick and easy campfire snacks to try that are delicious!
Easy Campfire Fruit Tarts
What you need:
- 1 package small biscuits (like Pillsbury Jr. Grands), refrigerated
- 2 cans pie filling of your choice(apple, blueberry cherry, raspberry etc.)
- Canned whipped cream
- Tarts on Fire Sticks (or you can use a small stainless steel cup/shot glass and any long stick)
Mold 1 biscuit dough around the outside of the stainless steel cup. If not using Tarts on Fire Sticks, insert a stick onto the opening of the cup to hold it over the fire. Roast the biscuit over an open flame (not directly on fire), rotating frequently for 1-2 minutes or until golden brown.
Place toasted biscuit on a plate, fill the opening with the fruit filling of your choice and top with whipped cream. Allow to cool for a couple of minutes before serving.
Toasted French Bread Pizza
What you need:
- Mini French bread loaves
- Cream cheese, softened
- Pizza sauce
- Grated mozzarella cheese
- Pizza toppings of your choice (pepperoni, sausage, onions, bell peppers, mushrooms, pineapple chunks etc.)
- Heavy duty aluminum foil
Slice French bread loaf in half. Spread a thin layer of cream cheese on both open faces of the loaf, followed by a thin layer of pizza sauce. Arrange toppings of your choice on bottom half of bread and top with grated mozzarella cheese. Put back top part of the bread to make a sandwich.
Wrap tightly with heavy duty aluminum foil, making sure each loaf is wrapped at least 2 times. Place the prepared loaves on a grill grate over a campfire (or over hot coals) for 6-8 minutes, turning a few times so they cook evenly.
Remove from the fire and allow a few minutes before opening the aluminum foil. Best served warm. Store in gallon-sized Ziploc bags.
